Epitome of grace

Graduation Contest Entry #1

My daughter, Adrienne, is the epitome of grace. Unlike her high-strung, Scotch-Irish mother (me!), she truly knows how to exude both confidence and humility in the face of life’s ups and downs and there are so many things that have surprised us through the years! As she graduates from high school this year, it is so hard to believe that a beautiful ballerina has developed from an almost 9-pound bundle of energy and joy that surprised her college student father and myself 18 years ago! When she was a little girl, she was somewhat shy, yet she sat back and took in all that was around her and bounded her way through every new adventure and stage in life – school, friendships, everything! – with a sense of wonder and acceptance that showed wisdom far beyond her years. She is a typical girl who giggles when her dad and brothers are being silly and sometimes cries too easily when she gets frustrated at her inability to master a new dance step, but in so many ways she is NOT typical in her kindness and acceptance of others. Secret’s Out Baby Contest

Secret's Out Baby ContestWhen my sister-in-law found out she was pregnant, she was super excited. She knew that her husband would be, too, and wanted to share the news in a fun, memorable way, since this sort of thing doesn’t happen every day! She came up with the idea of putting a bun in the oven—literally. She put a bun on a cookie sheet and put it in the oven. When he came home from work, she asked him to put a frozen pizza in the oven for dinner. When he opened the oven, he was puzzled over what was in there. It wasn’t until he voiced the question, “Why is there a bun in the oven?” that it clicked.

Moments like these are treasured and retold for a lifetime. Share your story by entering our Secret’s Out Baby Contest. It’s simple to enter. All you have to do is tell the story of how you (or someone you know) made the big announcement to their spouse, family or friends that you were pregnant. Friends can vote on your entry via Facebook, Twitter or email, and the winner gets a $1,000 Visa Gift Card, plus $100 to use toward birth announcements at Pear Tree Greetings.

Sound easy? It is! And if you’re not the one having a baby, you can always vote! We’re accepting entries until August 31, so start writing.

Family Recipe Showdown Contest Winners

Congratulations to our Family Recipe Showdown contest winners! After some mouth watering deliberation we’re proud to present to you this year’s winners!

Sushi Cake

by Hidemi W.

sushi cakeIngredients:

  • 2 cups Uncooked Japanese Rice or Sushi Rice
  • 1/2 cup Rice Vinegar
  • 4 tablespoons Sugar
  • 1 teaspoon Salt
  • 1 Avocado
  • 2 oz Philadelphia Cream Cheese, at room temperature
  • 1/2 tablespoon Lemon Juice
  • 2 tablespoon Mayonnaise
  • 2 Eggs
  • 8 oz Smoked Salmon

  1. Rinse rice several times in running water until water gets clear. Drain in a colander. Cook in a sauce pan with a lid or rice cooker according to package directions. Note, just a little bit less water than package directions so that rice is cooked a little bit harder. (To make perfect sushi rice, rice should be cooked little bit harder than regular rice)
  2. While rice is cooking, in a small bowl, combine rice vinegar, sugar and salt. Mix well.
  3. Make finely scrambled eggs. In a lightly oiled frying pan, pour the beaten eggs and stir with 4-5 chopsticks quickly and constantly to make finely scrambled eggs. If you don’t have chopsticks, make sure to stir quickly and constantly with fork, not to stir roughly.
  4. In a bowl, scoop avocado pulp and mash. Add cream cheese, and mayonnaise. Mix well.
  5. When rice is done, transfer to the medium bowl and add 2 and mix gently. Don’t stir too much. Let it cool.
  6. In a cake pan, place plastic wrap on the bottom of the pan, and put in scrambled eggs. Then place half of the sushi rice. Flatten the rice with fork (wet with water). Then put avocado cream cheese mixture on the sushi rice, and place the rest of the sushi rice. Press with wet fork hard to settle. Let it stand for about half an hour until sets.
  7. Turn the cake pan upside down onto the plate. Remove plastic wrap. Put smoked salmon shaped roses and a couple of leaves of spinach. Serve.

*To make rose-shaped smoked salmon, cut each piece of smoked salmon into half-1 inch length. Roll one piece by one piece with fingers until the size you want to make.
